Healthy "Fried Rice" with Quinoa

This year marks my 8th year with 97.3 The Eagle- WOW!  There are still two questions I always get asked...

1. Do you like country music?  Um yeah!!

Here I am back in college fangirling with Keith Urban and Phil Vassar...

Question #2. "Do you like working nights?"  

Yes, one of the biggest perks of working nights is sleeping in every day :)
Eating a frozen dinner every night in the studio though got old quick.  So lately I've been making all of meals for the week on Sunday.  Now I can just pop something into my bag before I leave for work that's healthy and homemade.

This week I decided to try to make Quinoa. 
Seriously, I'm obsessed.  I made this "fried rice" which is really just boiled Quinoa with sauteed veggies and I topped it with an oven baked tofu.
It tastes just like fried rice!  But without the frying and tons of protein from the Quinoa.  


Ingredients for the "Fried Rice"

8 ounces sliced mushrooms
1 zucchini chopped
1 head broccoli, cut into florets
1 cup frozen corn
1 cup frozen peas
3 carrots, peeled and grated
2 cups cooked quinoa
1/2 of an onion chopped
2 cloves of garlic minced
1 tablespoon grated fresh ginger
3 tablespoons soy sauce
2 green onions, sliced
Sriracha, for serving

Heat 1 tablespoon olive oil in a large wok over medium high heat. Add garlic and onion, and cook about 4-5 minutes.
Add mushrooms, broccoli and zucchini. Cook until vegetables are tender, about 3-4 minutes. Be sure to stir constantly so they don't burn.
Add in the frozen corn and peas, carrots and quinoa. Cook for 1-2 minutes.
Add ginger and soy sauce. Cook for about 2 more minutes. 
Keep stirring!  Throw in the green onions.
I drizzled a little Sriracha on top and my husband drizzled a lot.  It all depends on how much heat you can handle!

My husband topped his with this Sesame Chicken 

And I topped mine with this Oven Baked Tofu

A great meal for meat lovers and vegetarians alike!

Grammy Recap

The Grammy Awards were last night and there were some amazing performances!

Hunter Hayes debuted his new song "Invisible" and showed what country music is all about...a song that touches people's hearts!

Willie Nelson and Kris Kristofferson brought The Highwaymen back with the help of Merle Haggard and Blake Shelton.


Dierks Bentley live tweeted the show and clearly loved it too

and Keith Urban sang along in the audience

Turns out that was just a preview of what's to come...Willie said on the red carpet that he is working on a CD with Kris and Merle!


The Grammys killed it with cool collaborations. Keith Urban and Gary Clark did Cop Car.
I tweeted "Never been in a cop car but I would for Keith Urban" and about an hour later my husband is browsing Twitter on his phone and looks up and says "Hey you know you're married to me, right?!'  Sorry honey! Love you!

Miranda Lambert teamed up with Green Day's Billie Joe Armstrong to pay tribute to the Everly Brothers
and looked amazing! She may not have had the Pistol Annies there with her tonight but she brought the girls hehe

Miranda wasn't the only Female Country artist getting buzz for her outfit.  Check out Kacey Musgraves light up boots!
She won two Grammys: Best Country Album and Best Country Song and the best footwear of the night!

She was clearly surprised by her win

But Taylor Swift wasn't

Darius Rucker won as well for Best Solo Country Performance on "Wagon Wheel." That award wasn't televised so we didn't get to see Darius do an acceptance speech on-air. Here is is talking about his win backstage




Country music was well represented!  But I have to say Pink may not be country but WOW 

She is super human!

Winter is still here

Winterblast 2014 was for lack of a better word...a blast :) We hope you enjoyed the show as much as we did


Now that Winterblast is over I'm officially done with winter!  
Too bad Mother Nature isn't...Hampton Roads has more 20 degree days and snow coming this week.  So we'll be shivering in the cold at least another week. 
Don't get me wrong- I love snow...for a few days.  But I'm ready for warmer weather.  So all week long I'm getting you ready for spring with tickets to the Virginia Flower and Garden Expo at the Virginia Beach Convention Center January 31st- February 2nd.
Aah can't you almost spell the flowers blooming? The Expo will have over 100 vendors, spectacular floral displays, an art show and children's activities.  Listen to win your tickets on the Top 7@7:47 all week.

Chloe is a loving 7-year-old dog who has been in and out of Norfolk SPCA for a good portion of her life - once because her owners had to move and couldn’t take her and the second time because she wasn't getting along with her dog sister. She really deserves a home of her own and would really like to be an only pet. She has lots of energy and loves to go running. She also knows when to settle down to cuddle, relax or just hang out. Come visit her at the Norfolk SPCA!

DIY Legwarmers from an old sweater

I was going through my closet when I came across this sweater that had a hole in it.  I didn't want to throw it away so I decided to upcycle it into some leg warmers!
 As much as I love the 80s I wanted something a little more modern :)
So I cut the sleeves off and made these cute boot toppers
I loved how they turned out so much I went to Goodwill and found this sweater for $4. The pattern on the sleeves was too perfect to pass up...
 I started by just cutting the sleeves off as close to the shoulder as possible
 Then I got the iron and some no-sew tape and got to work making a hem
I found it was easiest to turn the fabric inside out and fold about an inch over. I cut enough tape to go around the hem once and then ironed it on.

I love them!
I've found so many different ways to wear them
I will never throw away another sweater again!

A blast of Winter is coming!

Ok Hampton Roads we might get an inch of snow this week...prepare yourself.  Like this guy did.

Meet Tip and Tippy 

They are about a year old. They've been at the Gloucester-Mathews Humane Society since August. They are as affectionate with people as they are with each other! They are both neutered, and up to date on all of their shots. The Gloucester-Mathews Humane Society is currently running a New Years special which makes the adoption fee for these two just $20.14 each!

And for the Dog lovers...this is Malia.
I was found as a stray in Mathews and brought to the shelter in August. My owner never came to re-claim me so I’ve been at the shelter since then. I am about 5 years old. I tested positive for heartworms. Our shelter dogs with heartworm disease are treated with the slow-kill approach. I am up to date on all other shots but am not yet spayed- I would be spayed before going to my new home. I recently got to take an exciting trip to the vet to have some cosmetic surgery done to remove a long skin tag. I even got to stay overnight in our shelter manager’s home where I got along great with her children. Now I’m back, healed, and feeling more beautiful than ever! $55 has been donated towards my adoption fee to help the right family take me home!

Jennifer Lawrence's talks Country Music at the Golden Globes

I am a bit of an awards show junkie- mainly for the dresses!  So I was watching the Golden Globes Red Carpet last night and saw this...
Ok Taylor Swift is in the middle of her interview and there's Jennifer Lawrence sneaking up behind her. It's quick but it makes for the Best Awards Show Photobomb!


I knew there was a reason I loved Jennifer Lawrence and not just because she loves food as much as I do
She also apparently likes country music and watches the CMA Awards!  Watch her talk about the awards show with Taylor here

This is Sailor. She is a Female Bluetick Coonhound and is 7 years old. 

Sailor was transferred to the shelter from tri county animal shelter with her sister Jazz. Sailor has been friendly with the staff since arrival and tolerant of handling. Sailor still has quite a journey she needs dental work at an additional fee of 100 she has a mammary mass that will need to be removed starting at 35 and she will need to go through heartworm treatment which is an additional 400 upon adoption. All these fees are the responsibility of her new parents. Please see a kennel technician if you would like to know more about this wonderful girl!

Very Veggie Soup

Ok I like cold weather...to a certain extent.  Cuddling up under a blanket with a fire and some hot chocolate is perfect on a chilly day.  But 24 degrees in Virginia Beach?!  No thanks. 


I had to wear a coat INSIDE my house today! So I made two big pots of homemade soup to warm me up from the inside out.  First up...Very Veggie Soup. 


Ingredients:
1 small head of cabbage chopped
1 bag of frozen Red, Yellow and Green pepper mix
3 cups chopped fresh broccoli
3 carrots chopped
8 celery stalks chopped
1/2 yellow onion chopped
2 garlic cloves minced
1 can tomato paste 
2 cans Fire Roasted diced tomatoes, undrained 
1 can diced chilies 
7 1/2 cups water
1 teaspoon dried parsley
1 teaspoon dried oregano
salt and pepper

Now you see why it's called "Very Veggie."

Instructions: 
Just throw everything into a pot and bring to a boil. Lower the heat and simmer until the veggies are soft (about 30-45 minutes) That's it. So simple. Mmm look at all those veggies!

I followed her recipe almost exactly.  I couldn't find canned lentils so I just cooked my own.  But considering that was really the only prep I had to do, I can handle that.
