is waking up to pancakes!
I've tried the "Cake batter" style of pancakes before and they are way to sweet for me...and that's saying a lot coming from someone with a huge sweet tooth. These are funfetti pancakes that still taste like pancakes.
Plus, the Greek yogurt makes them a little healthier, right?! So wake up your sweetie or the kids Valentine's morning to these FUNfetti pancakes
1 cup flour
2 Tablespoons Stevia (or sugar)
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 container Dannon Light and Fit Vanilla Greek Yogurt
1/2 cup milk (I used Unsweetened Almond Milk but regular milk will do)
1/4 cup Egg beaters (or 1 egg)
1 Tablespoon Vegetable Oil
1 Teaspoon Vanilla
Whisk together the dry ingredients and wet ingredients separately. Mix the wet into the dry just until combine. Let sit. While it's sitting you can make the sauce.
For the sauce combine together:
1 container Greek Yogurt- I used the Dannon Light and Fit Vanilla Greek Yogurt
1 teaspoon Agave Nector or Honey
1/4 teaspoon vanilla
2 teaspoons milk
Heat up your griddle and mix the sprinkles into the batter. Cook the pancakes 2-3 minutes on each side. Top with Greek Yogurt sauce and sprinkles.
