Very Veggie Soup

Ok I like cold weather...to a certain extent.  Cuddling up under a blanket with a fire and some hot chocolate is perfect on a chilly day.  But 24 degrees in Virginia Beach?!  No thanks. 


I had to wear a coat INSIDE my house today! So I made two big pots of homemade soup to warm me up from the inside out.  First up...Very Veggie Soup. 


Ingredients:
1 small head of cabbage chopped
1 bag of frozen Red, Yellow and Green pepper mix
3 cups chopped fresh broccoli
3 carrots chopped
8 celery stalks chopped
1/2 yellow onion chopped
2 garlic cloves minced
1 can tomato paste 
2 cans Fire Roasted diced tomatoes, undrained 
1 can diced chilies 
7 1/2 cups water
1 teaspoon dried parsley
1 teaspoon dried oregano
salt and pepper

Now you see why it's called "Very Veggie."

Instructions: 
Just throw everything into a pot and bring to a boil. Lower the heat and simmer until the veggies are soft (about 30-45 minutes) That's it. So simple. Mmm look at all those veggies!

I followed her recipe almost exactly.  I couldn't find canned lentils so I just cooked my own.  But considering that was really the only prep I had to do, I can handle that.
