Memorial Day fun!

Happy Memorial Day!  What a fun weekend but first, a moment to remember why we're celebrating...


 My sister and her family came down for the weekend so we took the kids to the playground at Mt. Trashmore...but somehow Brian and I ended up being the monkey bars ourselves! 

it's not Memorial Day weekend in Va Beach without a little strawberry picking 


We braved the chilly weather to go dolphin watching (seriously WHAT was going on with Mother Nature this weekend?) 


After seeing this viral video I thought about taking the cats too :) 




We may not have gotten a dolphin headbutt like that cat but we did spot a few swimming near the boat


TOO cool!



And it wouldn't be Memorial Day weekend without firing up the grill...yes Vegetarians grill too!


I made my Pinspired Grilled Corn, Avocado and Tomato Salad


So So good!  Here's the original recipe from "For The Love of Cooking"


Grilled Corn, Avocado and Tomato Salad with Honey Lime Dressing:
  • pint grape tomatoes cut in halves
  • 1 ripe avocado, roughly chopped
  • 2 ears of fresh sweet corn (I like corn so I used 4 ears) 
  • 2 tbsp fresh cilantro, chopped
Slice the tomatoes in half. Remove husks from corn and grill over medium heat for 10 minutes. Cut the corn off the cob then scrape the cob with the back of your knife to get the juices. Set aside and let cool. Dice the avocado and chop the cilantro.


Honey Lime Dressing:
  • Juice of 1 lime
  • 3 tbsp vegetable oil
  • 1 tbsp honey
  • Sea salt and fresh cracked pepper, to taste
  • 1 clove garlic, minced
  • Dash of cayenne pepper (I omitted this)

Add all the dressing ingredients in a small bowl and whisk to combine. Set aside.

Combine the sliced tomatoes, avocado, cilantro and grilled corn and honey lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados. Let the salad sit for 10-15 minutes to let flavors mingle. Enjoy.

Luke Bryan!!

So yesterday Luke Bryan came to NAS Oceana's Navy Exchange to sign autographs for the military and I got the chance to interview him along with Sky 4 TV.

Right before the interview he starts teasing me to not mess up!




 Gee thanks Luke :)  btw I know it looks like I'm yelling at him but don't come after me...


...I could never yell at that face! 

I mean just look at me



Within minutes of that picture being posted on Eagle's facebook page everyone was commenting that I looked like I was in awe...drooling...starstruck.  Yep, sounds about right.   

We talked about his Entertainer of the Year win

And he even spilled the beans on where he likes to hang out when he's in town

P.S. I have the BEST husband...not only does he spend his day off filming my interview, but then he spends his Saturday helping me make GIFS of Luke Bryan.

Transforming an Old Window into Chalkboard Art

I love old windows!  There are so many great uses for them. Normally I'll go to an antique store and pick one up for under $10 and redo it myself but when I came across this one I fell in love.



I saw it at an antique store in Williamsburg with a price tag of $50.  I talked them down to $40 knowing I'd want to make a few changes.

I loved the color it was painted and the shelf they added on.  But wasn't a fan of the stenciling.  Plus, when you looked up close you could the matting was just hand cut pieces of construction paper.  That had to go.

First, I scraped the stenciling off the glass with a little Goo Gone.  Then I used a can of Chalkboard spray paint to turn the glass into chalkboard!

Here's the final result


I love it!  I'm so happy with how it turned out that I don't mind spending $40 plus a can of spray paint on it. 

I may need to take some art lessons down the line but for now this will do.  Plus, I can always erase it and draw something new.  That's the fun of chalkboard paint :)

Pinterest Culinary Adventures

I feel so productive...I actually made a few recipes that I pinned on Pinterest this week!

Sunday was Cinco de Mayo so I tried this "Lighter Avocado Dip"  I was skeptical about the secret ingredient...cauliflower!  But it came out soooo good.  You can't even taste the cauliflower, just yummy guacamole.  The terrible picture on the left is how mine came out...but don't judge it based on that...I just haven't figured out how to use my new phone's camera yet.



I also tried this easy peasy Peanut Butter Breakfast Quesadilla. Just two tortillas, peanut butter, bananas, strawberries and chocolate grilled up like a quesadilla!



For breakfast another day I decided to give these "Only 65 calories" pancakes a try...I should've known better. Only 3 ingredients: Bananas, Blueberries and one egg.  They were a mushy mess.  They ended up being 0 calories...because they were inedible!

My last Pinterest culinary adventure for the week was banana bread.  I was craving it but only had one banana and every recipe I found called for 2-3...so I decided to combine a few different recipes.  I half expected another Pinterest fail but this was awesome!


here's my recipe for Banana Apple Bread:


1 cup flour
1/4 wheat flour
3/4 cup sugar/splenda
1 tsp baking soda
1 tsp baking powder
pinch of salt
1 ripe banana mashed
1 apple peeled and grated
1 container vanilla yogurt 
1/2 cup egg beater
1 tsp vanilla extract

Mix together wet and dry separately than combine.  Bake 350 for 45 minutes

So that's four pins down...only 601 to go!  I need help.
