Pumpkin Butterscotch Pancakes

It's the first day of October and you know what that means...it's time to put pumpkin flavor into everything!  I mean, come on, who doesn't like pumpkin? 


One of my favorite things to make every fall is Pumpkin Butterscotch Muffins so I thought...why not turn them into pancakes?? 

Recipe:
1 cup flour (I used white whole wheat)

3 Tablespoons Brown Sugar
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
1/4 teaspoon sea salt

-Whisk the dry ingredients together


1/3 cup canned pumpkin puree
1/3 cup Unsweetened Almond Milk
1/4 cup Unsweetened Applesauce
2 eggs

-Whisk together
-Combine the wet ingredients with the dry using a spatula.  Stir just until moistened.

Coat a nonstick griddle or pan with cooking spray; heat over medium-high heat.  Spoon batter into pan in batches using 1/4 cup batter for each pancake.  Cook until lightly browned, about 3 to 4 minutes per side. 

Here comes the fun part...Top with Butterscotch chips! 

Seriously the combo of pumpkin and butterscotch is amazing!  Enjoy :)
