Harvest Apple Chili

Ok where did Fall go??  Suddenly it feels like winter and it's only October


Sadly, this week is just a preview of the cold days ahead. The only way to get through will be with a warm bowl of chili!


This recipe is so easy so you can throw everything on the stove and run back to cuddling up with a blanket



Ingredients:

1 jar of thick and chunky salsa 
14 oz vegetable stock
1 can black beans drained and rinsed
1 can yellow hominy drained and rinsed
1 medium Granny Smith apple cored and chopped
1/3 cup Golden Raisins
1/3 cup Dried Apricots
1 Tablespoon unsweetened cocoa powder
2-4 teaspoons Chili Powder (I always end up adding more)
2-3 dashes of Chipotle flavored hot sauce
Cashews

In a dutch oven combine all the ingredients except the cashews and bring to a boil.  Reduce heat.  Simmer, covered, for 20 minutes.  Top with cashews and, if you like, more apple slices.  

I lucked out and had a jar of apple salsa that I bought from a road side stand this summer that was PERFECT for this recipe but I've made it with regular salsa and it's just as good.
