Apple Cider Pancakes with Cinnamon Sugar Topping

When my husband and I woke up this morning I said "Summer sucked...let's make fall fantastic"  

For the past 8+ weeks we've traveled every weekend.  During July and August we drove down to Raleigh once...sometimes twice a week...for Bailey's cancer treatments. Then the day we picked him up my nephew fell at the playground and had to be flown to MCV hospital in Richmond.  He ended up spending a month in the hospital and having a shunt put in and this week he finally got to go home! 

So this is the first weekend in over 2 months that everyone is back home where they are supposed to be and I plan on enjoying every minute!

A good day starts with a good breakfast, right?  


And what's better on a cool Fall morning than a cup of apple cider?  I start just about every day off with a cup of this



so I thought "why not use some to make Apple Cider Pancakes?"  


Apple Cider Pancakes

1 1/4 cup flour
1 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt 

1 egg
2 Tablespoons oil
1/4 Unsweetened Almond Milk (you can also use buttermilk or regular milk)
1/4 cup plain Greek Yogurt
1 teaspoon honey
1/2 cup apple cider (or apple juice)

Top with melted butter and Cinnamon Sugar (combine 3 Tablespoons sugar with 1 1/2 Tablespoons Cinnamon) and, of course, a little syrup
