You had me at Peanut Butter

Friday was Bailey's last radiation treatment at NC State and to celebrate the vets there sent him home looking quite handsome in a new handkerchief.

Like any self respecting cat he quickly decided it had to go and that's when we found the sweet notes all of the doctors had written on the back

I especially loved that Dr. Arkans signed it to their "Rock Star Patient."  Bailey did great during the four weeks of treatment.  

To thank the vets for all of their attention and patience (with me, not Bailey haha) I decided to make them these Chocolate Peanut Butter Bars. 

Ok here's the recipe:

1 package yellow cake mix
1/2 cup egg beaters (or 2 eggs)
1 cup creamy peanut butter
1/2 cup melted butter

Combine these ingredients in a large bowl.  Press about half of it into the bottom of a 9x13 pan and save the rest for a topping

In a saucepan heat
1 package semi sweet chocolate chips
1 can sweetened condensed milk
2 Tablespoons butter

The original recipe says to add 2 teaspoons vanilla once removing the pan from the heat.  I forgot that and didn't miss it at all.

Pour the chocolate mix on top of the "crust" on the pan.  Top with the remaining cake mix.

Bake at 325 for 25 minutes.  Mine needed all of the 25 minutes.  Cool before cutting.

Sounds absolutely yummy and definitely going to try. We are continuing to pray for your munchkin, bailey! Much luv to u and thanks for keeping our household entertained, especially during mine and my daughter's late-night baking sessions in the kitchen...we're a homeschool family, so we can swing that every now and then, lol!
