Pinterest Culinary Adventures

I feel so productive...I actually made a few recipes that I pinned on Pinterest this week!

Sunday was Cinco de Mayo so I tried this "Lighter Avocado Dip"  I was skeptical about the secret ingredient...cauliflower!  But it came out soooo good.  You can't even taste the cauliflower, just yummy guacamole.  The terrible picture on the left is how mine came out...but don't judge it based on that...I just haven't figured out how to use my new phone's camera yet.



I also tried this easy peasy Peanut Butter Breakfast Quesadilla. Just two tortillas, peanut butter, bananas, strawberries and chocolate grilled up like a quesadilla!



For breakfast another day I decided to give these "Only 65 calories" pancakes a try...I should've known better. Only 3 ingredients: Bananas, Blueberries and one egg.  They were a mushy mess.  They ended up being 0 calories...because they were inedible!

My last Pinterest culinary adventure for the week was banana bread.  I was craving it but only had one banana and every recipe I found called for 2-3...so I decided to combine a few different recipes.  I half expected another Pinterest fail but this was awesome!


here's my recipe for Banana Apple Bread:


1 cup flour
1/4 wheat flour
3/4 cup sugar/splenda
1 tsp baking soda
1 tsp baking powder
pinch of salt
1 ripe banana mashed
1 apple peeled and grated
1 container vanilla yogurt 
1/2 cup egg beater
1 tsp vanilla extract

Mix together wet and dry separately than combine.  Bake 350 for 45 minutes

So that's four pins down...only 601 to go!  I need help.
