Happy Easter!

I love Easter weekend! Everyone gets dressed up in their new Easter outfits...

to go to church and visit the Easter bunny

My first year working on The Eagle we did an event offering pet photos with the Easter Bunny so I brought my cat Bailey 

Just like that little girl...he wanted to get away as quickly as possible! 

Next best thing about Easter: the Easter Egg Hunt! My "Pop" would always hide a quarter in one of the plastic eggs. My sister and I would run around the yard picking up eggs as fast as we could and shaking them hoping to hear that magical jingle.

Pop passed away last year and even though we hadn't done an Easter Egg hunt in years, I'll miss the joy of finding that quarter hidden in my Easter Egg.

side note: I found that Bunny hat in the big blue Eagle van one day and couldn't resist putting it this day I have no idea what it was doing in there.

Girl Scout Cookie Fever!

Yes, I'm talking to a cookie.

Girl Scout cookies are gone SO fast and well, I may have gone a little crazy when I realized my stash was empty! 

What can I say...I needed my fix!

And it was totally worth it!

I may love Screaming Goat videos a little too much and my cat does not appreciate it!

My favorite though is the screaming sheep

It's so good it's popping up in Carrie Underwood videos

and Taylor Swift

gotta say...I may be biased but I think my cat's scream is the best out of all of them :)

St. Patty's Day!

I may not be Irish but I can still celebrate St. Patty's Day, right?  If only to avoid being pinched!

And for the food!

Lucky Charms- eaten the RIGHT way! Seriously- does anyone like the actual cereal in Lucky Charms?

And, of course, there's the Shamrock Shake

But this is what I want for breakfast!

Any excuse for pancakes, right?!

Mine may not have come out as pretty as the picture but they were pretty tasty :)

I halved the recipe since it's just my husband and I.  Here it is:

2/3 Cup Flour
1/2 Tablespoon Sugar
1/2 teaspoon Baking Powder
1/4 teaspoons Salt and Baking Soda
1/2 cup buttermilk
1/4 cup egg beaters (or one egg)
1 Tablespoon butter melted and cooled
1/4 teaspoon of vanilla extract
1/4 teaspoon of mint extract
2 drops green food coloring
1/4 cup semi-sweet chocolate chips.

Combine the dry ingredients and wet ingredients separately and then mix together.  Stir in the chocolate chips last.  Then just throw them on the griddle like normal pancakes.

I'd say "Yes" all over again

So today is National Pi(e) Day...get it? March 14th?  Well as much as I love to celebrate pie...

I realized that tomorrow is March 15th- the 5th Anniversary of the day my husband proposed.

It all started with a crossword puzzle that I had to solve to find him
Luckily this is the first...and only...crossword puzzle I've ever finished on my own!  I found him in front of the Founders Inn fountain in Va Beach with a dozen roses...

and a ring!

One that was even better than a ring pop!  But seriously, ring pops are pretty AND tasty!  What could be better?

I'd say "Yes" all over again!

Humpback Whales and Dolphins at the Va Beach Oceanfront

When I was asked "What do you want to be when you grow up?" I knew...a marine biologist! What could be better than getting to see dolphins every day?! 

Slight problem.  I can't swim and I'm absolutely terrified of the deep end.

Since the ocean is pretty much all deep end I decided to go another route :)

So when I saw that the Virginia Aquarium offers a boat trip to see humpback whales, dolphins and other winter wildlife...I was on board!

Check out the amazing wildlife we spotted right off the Va Beach oceanfront.

SO exciting!  Side note, how awesome was my fellow passenger shouting "Woa, get the Cam-er-a!"  

Seeing and being so close to whales and dolphins turns even the toughest of adults into little kids again.

Everyone on the boat would start cheering the whale on hoping to see that tail pop out of the water.  Yep, we were THAT close!

I'm in love!!

So fun and I didn't even have to swim in the deep end :)
