Apple Butter Pumpkin Pie

I love pumpkin pie! My husband...not so much. So I compromised for Thanksgiving and found an Apple Butter Pumpkin Pie recipe on Pinterest.

I found another similar recipe on and decided to combine the two and see what happened. Here's what I got...

It tasted good but the streusel topping wasn't quite right. So I decided to try again and this time changed up the topping...I used 2 tablespoons flour, 2 tablespoons butter, 1/4 cup brown sugar and 1/4 cup chopped nuts.

Much better! It looks soooo good now!

So here's my final recipe:

1 cup canned pumpkin puree
1 cup apple butter
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ginger
1/4 teaspoon salt
3/4 cup egg beaters
1 cup evaporated skim milk

2 Tablespoons Flour
2 Tablespoons Butter
1/4 cup brown sugar
1/4 cup chopped pecans

1 (9 inch) unbaked deep dish pie crust

Preheat oven to 350. Combine pumpkin, apple butter, 1/4 cup brown sugar, cinnamon, nutmeg, and salt. Stir in eggs and evaporated milk. Pour into prepared pie shell.
Bake in preheated oven for 50 to 60 minutes. Sprinkle streusel topping over the pie, and bake for an additional 15 minutes.

To make the streusel topping combine butter, flour, and 1/3 cup brown sugar. Stir until mixture resembles coarse crumbs. Stir in pecans.

I will definitely label this one a Pinterest success!
